VINIFICATION

Maceration: absent, direct pressing of the grapes
Maturation: 18 months on its own yeasts
Preservation and endurance: bottle in horizontal position, more than 10 years

SENSORY PROFILE

Intense golden yellow color with amber highlights. Aromas of apricot and dried figs. Warm sweet taste, sapid finish.

HARVEST

Period: 1st week of November, with about 30% of the grapes covered by the noble botrytis
Harvest: hand-picking with the 5 kg boxes, the grapes that are not covered by the noble botrytis are placed on racks to wither until January – February
