The symbol of the historical link between the Negro Family and these terroirs. The estate’s leading symbolic label, Perdaudin is made in the vineyards of the old Podere di Audino. The marine origin of the soils gives life to a nectar rich in mineral scents, typical of Roero wines.

VINIFICATION

Maceration: absent, direct pressing of the grapes
Malolactic fermentation: absent
Fermentation: in stainless steel tanks at 15-17 degrees
Maturation: in stainless steel tanks for 7 months “sur lies” with “batonnage” plus 12 months in bottle
Preservation and endurance: bottle in horizontal position, 10 years

SENSORY PROFILE

Intense straw yellow color. Aroma of white flowers such as acacia and orange blossom, notes of pineapple and pear. The palate has a strong, full, warm attack, with a long final and is characterized by a pleasant mineral note.
